Vegetable Stew

Hi guys! 


Hope you are all well!


I have such an exciting recipe for you tonight, this stew is seriously so tasty! It's my favourite thing at the moment to make in large batches. Its so easy to make & smells absolutely gorgeous! 


It is packed full of your 5 a day so you will be getting your daily dose of fibre and vitamins too! 


You will need.. 


500g frozen butternut squash 

x 1 chopped carrot 

1/2 chopped courgette 

100g broccoli chopped into smaller trees! 

1 can chickpeas 

8 tbsp. tamari (gf if coeliac/intolerant) 

400g chopped tomatoes 

1/2 chopped onion 

2 cloves garlic (crushed) 

1/2 teaspoon paprika, turmeric and cumin. 

1 tbsp. tomato paste 

1 can (400ml) light coconut milk (I use biona organic) 

1/2 cup water (doesn't have to be organic)


To make:


Pre heat oven 180-200 degrees. 


1. Place all chopped veggies into a large dish including the frozen butternut squash, onion and garlic. 

2. Add the chopped tomatoes, tomato paste, tamari and spices. 

3. stir well. 

4. Add the coconut milk, stir again. 

5. Finish with adding the additional 1/2 cup water. 


Cook on 180-200 degrees for 40-50 minutes. 


Stir half way through. 


Serve with quinoa/brown rice.
